We open a region only once enough producers there have passed review to make the drive worth it — never before. That bar did not move when we crossed an ocean: Bordeaux, Speyside, Barossa Valley are open and bookable today, in their own currency.

How a region opens
Six approved producers, or we don’t open it
A region goes live when at least six producers within about an hour of each other have passed review — enough that a guest can build a real day out of it rather than driving three hours for one tasting. We visit every one of them before the region appears here.
If a region falls below six, we close it and email everyone with a booking. We have done that twice.
Waitlist signal. Enough people name the region as where they’d go first.
Scouting. We go and drink there, unannounced, on our own money.
Review. Producers apply and go through the same queue as everyone else.
Open. Six approved and routable, and the region appears on this map.
