The short version

What to expect

The Hill Country grows on caliche and heat. Vineyards here gave up on imitating Napa two decades ago and planted what the ground actually wanted — Tempranillo, Mourvèdre, Viognier — and the wines got honest.

Distilleries followed the same logic, working with sorghum and blue corn. Plan a Saturday around two tasting rooms and one long lunch. Everything is within forty minutes of Fredericksburg.
