The Spey runs cold and fast off the Cairngorms, and the reason half of Scotland's malt whisky is made within sight of it is not romance — it is water, barley and a long history of doing this out of sight of the excise man.
The distilleries here are close enough together that a day can hold three, which is two more than you should taste properly. Take a driver. Every producer on this page pours cask strength, and they will tell you when to add water.
